I have professed my love for The Pioneer Woman before, and today I am going to do it again. A while ago, I had saved this recipe for Baked Lemon Pasta. The promise of spring days was just around the corner, and I knew this recipe would be perfect to make on a warm night. Last night was just the night. I used whole wheat pasta and light sour cream, so the recipe was pretty healthy. For the record, I absolutely loved it! If you like lemons, this recipe is for you. Be sure to use fresh Parmesan cheese & parsley (which I didn't use because I always waste all but the 2-3 TBS the recipe calls for). It's all SO easy! Enjoy my friends!
